Hello Everyone!

Hopefully the cold and wintery weather that we’ve been having hasn’t taken all of you out of the hot-rodding mood! Maybe now is the time of year where it would be a great idea to get out those old photographs of warmer days and car show pasts, just to "make" us remember how much fun the warmer weather will be. Also, this is a good time of year to get those little projects done on our sparkling beauties so that they are "cruise ready" when the weather does change for the better.

As I said last month, this is the slow time of year for "hot rod" news and schedules of events, but we do have a few. Remember, we have the Platte River Mall indoor show March 4-6; and with that, here is a list of shows and events that will be coming up:

Feb. 19 & 20……Tri-City Street Rods Show at Heartland Events Center, Grand Island

March 4-6…..Platte River Mall Show (Put cars in the night of the 4

th and take them out evening of the 6th)

March 18-20….O’Reilly Auto Parts World of Wheels, Qwest Center, Omaha, NE

Our next meeting will be on Tuesday, February 15

th at Pizza Hut in North Platte. As always, if you’d like to eat please arrive at 5:30 pm and the meeting will start at 7:00 pm.

REMINDER: Annual Dues of $15.00 are due by March 1

One thing to do, in this slack time of the year, with our gasoline drinking partners is to go over everything before spring gets here. Safety First everyone! Look over all those things we take for granted that will just be ok, ok?

COOKING CORNER

Baked Dijon Salmon

1/4 cup butter, melted

3 tablespoons Dijon mustard

1 1/2 tablespoons honey

1/4 cup dry bread crumbs

1/4 cup finely chopped pecans

4 teaspoons chopped fresh parsley

4 (4 ounce) fillets salmon

salt and pepper to taste

1 lemon, for garnish

1. Preheat oven to 400 degrees F.

2. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.

3. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.

4. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.
